Avocado & Chicken Salad Lettuce Wraps
Prep Time: 15 minutes Total Time: 15 minutes
Ingredients:
2 cups cooked chicken breast, shredded
1 ripe avocado, diced
1/4 cup Greek yogurt
1 tablespoon lime juice
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
1 head of Romaine or Bibb lettuce, leaves separated
Instructions:
In a large bowl, combine the shredded chicken, diced avocado, Greek yogurt, lime juice, red onion, and cilantro. Mix well until all ingredients are evenly coated.
Season with salt and pepper to taste.
Spoon the chicken and avocado mixture into the lettuce leaves to create wraps.
Serve immediately or chill in the refrigerator until ready to eat.
