Harvest Chicken with Wild Rice Soup

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour

Ingredients:

  • 1 lb boneless, skinless chicken breasts, diced
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup wild rice
  • 6 cups chicken broth
  • 1 cup butternut squash, diced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large pot, sauté the onion, carrots, and celery in a little olive oil over medium heat until softened.
  2. Add the garlic and cook for another minute.
  3. Stir in the diced chicken, wild rice, chicken broth, butternut squash, thyme, bay leaf, salt, and pepper.
  4. Bring the soup to a boil, then reduce the heat and simmer for 40 minutes, or until the rice is tender and the chicken is cooked through.
  5. If using, stir in the heavy cream and heat through.
  6. Serve the soup hot, garnished with fresh parsley.
