1/4 cup panko breadcrumbs (whole wheat if available)
1 tablespoon Dijon mustard
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
2 large sweet potatoes, sliced into 1/2-inch thick rounds
1 tablespoon olive oil
4 slices cheddar cheese (optional)
Lettuce and tomato (for garnish)
Dijon mustard or ketchup (for serving)
Instructions:
Preheat the oven to 400°F (200°C).
In a large bowl, mix together the ground turkey, egg, panko breadcrumbs, Dijon mustard, garlic powder, paprika, salt, and pepper. Form into small patties.
Heat a skillet over medium heat and cook the turkey patties for 4-5 minutes on each side until fully cooked. If using cheese, add a slice to each patty during the last minute of cooking to melt.
Toss the sweet potato rounds in olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender.
Assemble the sliders by placing the turkey patties between two roasted sweet potato slices. Garnish with lettuce, tomato, and your choice of mustard or ketchup.
