Egg Muffins

Ingredients:

  • 8 eggs
  • 1 cup spinach, chopped
  • 1 bell pepper, diced
  • 1/2 onion, finely chopped
  • Salt and pepper, to taste
  • Cooking spray or olive oil for greasing
  • Whole grain toast (optional, for serving)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or olive oil.
  2. In a large bowl, whisk together eggs, salt, and pepper.
  3. Stir in chopped spinach, diced bell pepper, and finely chopped onion.
  4. Pour the egg and vegetable mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes, or until the egg muffins are set and lightly golden on top.
  6. Remove from the oven and let cool slightly before removing from the muffin tin.
  7. Serve warm with a side of whole grain toast, if desired.
