Loaded Sweet Potato Nachos

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients:

  • 2 large sweet potatoes, sliced into thin rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 avocado, diced
  • 1/4 cup Greek yogurt or sour cream
  • 1/4 cup salsa
  • 1/4 cup green onions, chopped
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds in olive oil, salt, and pepper. Arrange them in a single layer on the baking sheet and roast for 25-30 minutes, flipping halfway through, until they are crisp.
  3. Remove the sweet potatoes from the oven and top with black beans and shredded cheese if using. Return to the oven for another 5 minutes until the cheese melts.
  4. Once out of the oven, top with diced avocado, Greek yogurt, salsa, green onions, and cilantro.
  5. Serve immediately and enjoy as a healthier version of classic nachos.
